Upland sticky rice dyed a glossy purple with magenta leaves and khau cam plant, chewy, fragrant and strikingly colorful, a beautiful dish of the Lai Chau highlands.
The Thai and Dao people of Lai Chau dye their sticky rice with the juice of magenta leaves or the wild khau cam plant, creating a vivid natural purple with no artificial coloring. The plump upland rice grains absorb the color and are steamed in a wooden pot until soft and fragrant. Purple sticky rice often appears at festivals and weddings as a symbol of abundance and good fortune.
