The Thai people of Dien Bien grow this upland sticky rice on their hillside fields, yielding plump grains renowned as the softest and most fragrant in the northwestern mountains. The rice is soaked in stream water and steamed twice in a traditional wooden basket, so it cooks through without turning mushy. A warm handful wrapped in dong leaves is breakfast, and travel provisions for the long roads of the highland peoples.
