๐Ÿ– Muong Free-Range Pork (thit lon man)

Raised free-range by the Muong people, this hill pork is firm, lean and sweetly fragrant, cooked into a variety of boiled, grilled and leaf-steamed mountain dishes.

Lon man, also called "under-the-arm pig," is raised in the wild on the hills of Hoa Binh by the Muong people. Grazing on grass and greens gives the meat a firm texture, little fat and a distinctive aroma. For festivals, the Muong slaughter a pig to lay out a full feast of boiled, grilled, leaf-steamed and rusa-man dishes. This is the culinary essence of the Muong lands beside the Da River.
