Ninh Binh's mountain goats roam the limestone ranges, climbing and grazing on medicinal leaves that give their meat a firm texture, sweet aroma and far less gaminess than farm-raised goat. The most celebrated dish is de tai chanh, tender lime-cured goat wrapped in young fig leaves and dipped in fermented soybean sauce. No visitor to the ancient capital of Hoa Lu can resist a plate of this famous mountain goat.
