Pa pinh top means 'folded grilled fish' in the Thai language, a dish that shows the deftness of Dien Bien's Thai people in honoring esteemed guests. A stream fish is split along the spine, stuffed full of mac khen, ginger, lemongrass and wild herbs, then folded in half, clamped in bamboo and grilled over glowing embers. The golden, smoke-scented skin and the numbing, spicy mac khen make an unmistakable flavor of the mountains and forests.
