Rare limestone-mountain snails with firm, chewy flesh scented of herbal medicine, steamed with lemongrass or stir-fried spicy, appearing only on damp rainy days.

Ninh Binh's mountain snails hide deep in limestone crevices, emerging to feed only during the rainy season from April to August, which makes them exceedingly rare and prized. Because they graze on wild grasses and medicinal leaves on the mountains, their flesh is firm and chewy with a distinctive herbal fragrance. Locals usually steam them with lemongrass and ginger or stir-fry them spicy to preserve their wild mountain flavor.
