Charcoal-grilled pork sausage rolled in rice paper with crisp fried spring rolls (chả ram), dipped in a smooth, glossy peanut-and-sticky-rice sauce.

From the town of Ninh Hòa, this grilled pork roll won over all of Nha Trang. The pork is pounded by hand while still warm and grilled the same day, and the secret dipping sauce is cooked from glutinous rice, liver and peanuts — sweet and nutty like nowhere else.
