The nem village of Lai Vung on the Hau River has kept its fires burning for more than 60 years. Lean pork and pork skin are mixed by the secret 'eight parts meat, two parts skin' formula, seasoned with pepper and chili and wrapped in banana leaf โ€” three days later it sours to perfection, and eaten with a few cloves of garlic it is the tastiest bite in Dong Thap.
