Nem chạo, or raw rice-powder pork, is a traditional dish of Vị Thủy village in Thái Bình, served at death anniversaries and village festivals. Freshly slaughtered pork, still warm, is worked with toasted rice powder along with slivered skin, garlic and chili until aromatic. Villagers wrap the nem in fig and guava leaves and dip it in ginger fish sauce, preserving the earthy flavors of the northern countryside.
