Glossy dark arrowroot noodles handmade in Con Minh, chewy and springy, cooked with hill-raised chicken or shrimp from Ba Be Lake.
Canna arrowroot grown on the Ang Toong pass yields pure, unblended starch for the noodles. The strands hold their bite without turning to mush, and served with free-range hill chicken or Ba Be Lake shrimp they make the signature breakfast of Bac Kan.
