Spiced pork belly steamed with taro until meltingly tender, rich yet delicate, a festive dish of the Tay and Nung peoples.

Khau Nhuc traces its roots to Zhuang cuisine across the border, adapted by the Tay and Nung people of Lang Son into a stately banquet dish. The pork belly is seared, marinated, then steamed for hours with taro and preserved mustard leaves until it falls apart on the tongue. This elaborate dish typically appears at weddings and Lunar New Year celebrations in the highlands.
