Sa Đéc noodles — white, tender yet springy — in a crystal-clear, bone-sweet broth, served in soup or dry-tossed, always fragrant with fried garlic.
Sa Đéc in Đồng Tháp is renowned for its age-old rice-flour village, which produces some of the springiest, chewiest noodles in the Mekong Delta. A proper bowl of hủ tiếu carries minced pork, shrimp, liver, fried shallots and bean sprouts with garlic chives, bathed in a clean, sweet bone broth. Locals also love the dry version tossed in soy sauce, with the broth sipped on the side.
