Clear, springy rice noodles in a sweet, delicate pork-bone broth with shrimp, pork and offal — the pride of the Mekong Delta.

Brought south by Chinese settlers, hủ tiếu took root in My Tho, where the noodles are made from famous Go Cat rice prized for their chewy texture. It can be served in broth or dry, tossed with soy sauce.
