Fresh silver-fish cured snow-white in lime and vinegar, wrapped in rice paper with fresh herbs and dipped in bold fermented anchovy sauce, a specialty of the Phan Thiet coast.

Along the Phan Thiet coast, the small, translucent, odorless silver-fish is transformed by fishermen into a uniquely crisp, sweet ceviche-style salad. Eaten wrapped with wild herbs and dipped in pungent mắm nêm, it embodies the free-spirited, raw-and-fresh dining style of the seaside folk of Binh Thuan.
