Phuong Tuong village in Hung Yen is renowned for its frog-catching trade and its heirloom braised frog dish. Plump field frogs are cleaned and braised until tender with green banana, tofu, perilla and sour fermented rice by a closely guarded recipe, yielding a thick golden broth and chewy, sweet frog meat. This rustic dish reflects the bountiful village life of the Red River Delta.
