Jade-green young sticky rice from Tu Le's Tan variety, tender and fragrant with the milk of unripe grain, in the Mu Cang Chai valley.
The Tan sticky rice is harvested while the grains are still milky, roasted in a cast-iron pan and pounded by hand right in the village. A pinch of the green rice eaten with ripe banana, or simply nibbled with hot tea, is enough to make you long for the golden season of the Northwest.
