Cold rice tossed with sauteed baby clams, shrimp paste, crisp pork cracklings and fresh herbs, ladled with sweet clam broth, a humble dish steeped in the soul of Hue.

Com hen was born of the thrift of the people of Con Hen islet in the Perfume River, who made the most of cold rice and tiny clams to create a rustic dish. Once fare for the poor, com hen has become a specialty that leaves everyone far from Hue longing for its uniquely fiery, briny flavor.
