🍚 Cốm dẹp (Flattened Green Rice)

Young glutinous rice pounded flat and tossed with grated coconut and sugar — chewy and fragrant with the scent of new-harvest grain, a sacred sweet of the southern Khmer.

Cốm dẹp is inseparable from the Ok Om Bok moon-worship festival of the Khmer people of Trà Vinh. Young glutinous rice is roasted, then pounded flat in a tall mortar and tossed with grated coconut and a little sugar until soft and chewy. This humble dish carries both an agricultural faith and the people of the Mekong Delta's gratitude for the harvest.
