Golden, crackling rice crust drenched in a rich mountain-goat and offal sauce — the legendary pairing of the ancient capital of Hoa Lu.
The dish is said to have followed the people of Ninh Binh since the late 19th century. The crust that forms at the bottom of the cast-iron pot is peeled off, sun-dried, then deep-fried until it puffs up, and finished with a sauce of highland goat — an explosion of crunch and deep savour that will forever remind you of Trang An.
