Cháo bột Kẻ Diên, also called "cháo vạt giường" because the dough is rolled thin and cut into wide flat strips resembling bed slats, is a celebrated specialty of the Hải Lăng area in Quảng Trị. Field-caught snakehead fish is boiled, flaked, marinated in turmeric and simmered in a sweet bone broth with rice-flour noodles. Its signature tongue-searing heat lingers in the memory of anyone who tastes it, warming the soul in this land of scorching Lào winds and white sand.
