A bitter porridge made from the aconite root of Ha Giang's rocky peaks — one taste and its 'bitter with a sweet finish' lingers forever.
The aconite root is toxic and must be simmered for dozens of hours to become medicinal. Ha Giang locals eat this porridge at night like a sleep remedy: faintly bitter on the tongue, then slowly sweet with pork trotter and egg.
