Chewy golden noodles made with water from the Bá Lễ well, char siu pork, crisp pork cracklings and Trà Quế herbs — only Hội An gets it right.
Cao lầu is the Japanese–Chinese–Vietnamese fusion of the old trading port of Hội An. Legend has it the noodles are only authentic when soaked in wood ash from Cù Lao Chàm island and kneaded with water from the ancient Bá Lễ well.
Flavour: Chewy, savory, with little broth and layers of crunch
