A silky, whipped egg-cream crown atop bold black coffee — Vietnam's own tiramisu.

Born in 1940s Hanoi when milk was scarce, Mr. Nguyen Van Giang whipped egg yolks with sugar in its place. The warm cup rests in a bowl of hot water, its egg cream thick and rich without a hint of eggy smell.
