Da River fish is split along the back, stuffed with herbs and mac khen pepper, folded shut and grilled over coals until the skin is crisp and the flesh sweet and fragrant, Muong and Thai style.

Pa pinh top, meaning "folded grilled fish," is one of the most elaborate dishes of the Thai and Muong peoples along the Da River. The fish is slit along the spine, packed with mac khen pepper, scallions and herbs, then folded double, clamped in bamboo and grilled over embers. Skillful grilling drives the seasoning deep in, turning the skin golden and crisp while the flesh stays plump and sweet, a gesture of a village's warm hospitality.
