Cá chua is a traditional dish of the ethnic communities of Kon Tum, made from fresh stream fish mixed with roasted corn meal, salt and chili, then fermented in bamboo tubes or jars. After a few days, the fish develops its distinctive natural tang and is braised or stewed with bamboo shoots and cassava leaves. It is the Central Highlanders' ingenious way of preserving food, while creating a specialty steeped in the soul of the highland forests.
