The Thai people of Lai Chau have an ingenious way of cooking with hearth ash: fresh stream goby is seasoned with mac khen, ginger and lemongrass, wrapped in dong leaves and buried in hot ash to cook slowly. Cooking without direct flame keeps the fish sweet and lets it soak up the forest spices, filling the stilt-house kitchen with its aroma.
