Hung Yen's elaborate bun thang, swapping the traditional chicken for field eel stir-fried with turmeric.

Pho Hien, once hailed as 'second only to the capital,' left behind its own version of bun thang: field eel braised with turmeric, egg sliced into fine threads, and pork sausage over a broth sweet with simmered bones. Refined, and rarely still cooked to its true flavor anywhere.
