Fresh noodles made on the spot with shrimp and fish paste smeared right into the bowl, while diners 'stir' their own dipping sauce to taste.

Descended from Binh Dinh's shrimp noodles brought to the island by fishermen, bún quậy became a Phu Quoc ritual: you mix your own salt, sugar, kumquat and chilli into a dipping sauce — every bowl its own flavour, no two alike.
