Springy, sweet mackerel fish cakes in a broth simmered from sea-fish bones — light and clear, with no fishy edge.

The seaside city of Quy Nhơn has its own take on fish cake noodles: both the steamed and fried cakes are pounded from fresh mackerel, and the broth is made only from fish bones and pineapple, so it comes out crystal clear — a dash of chili satay and some pickled onion make it just right.
