🌶️ Hue Beef Noodle Soup (Bun Bo Hue)

A ruby-red lemongrass-and-chilli broth with thick round noodles, beef shank and crab cakes — the signature fiery flavour of the ancient capital.

From the noodle stalls of Van Cu village, bun bo grew into the pride of Hue. The broth is simmered from beef bones and pork trotter with lemongrass and Hue shrimp paste; the red hue comes from annatto oil — fragrant and spicy without ever being harsh.
