Bò tái kiến đốt is a singular dish from the Tam Đảo region of Vĩnh Phúc, showcasing the daring creativity of its people. A slab of fresh beef is hung over a forest ant nest so the ants swarm and sting it, releasing acid that imparts a distinctive sourness and aroma while making the meat firmer and sweeter. The beef is then thinly sliced, cured in lime and tossed with seasonings and fresh herbs.
