🥮 Xiu Pao Pastry (banh xiu pao)

A multi-layered pastry with a crisp, flaky crust wrapped around savory char siu pork and a rich salted egg yolk, a famed Chinese-origin snack of Nam Dinh.

Banh xiu pao followed Chinese settlers to Nam Dinh and became a snack woven into the memories of generations of Thanh Nam schoolchildren. The dough is rolled thin in many layers and baked crisp and flaky, enclosing a filling of five-spice char siu pork and salted egg yolk. This dainty, golden little pastry is at its best while still warm.
