The craft of dew-dried rice paper in Trang Bang is recognized as a national intangible cultural heritage: the sheets are grilled until they puff up, then hung out to catch the late-night dew for a uniquely soft, chewy texture. Rolled with boiled pork and more than 20 kinds of wild herbs and dipped in fermented anchovy sauce, it is Tay Ninh's signature dish for welcoming travelers from afar.
