Bánh tằm Ngan Dừa is the pride of Hồng Dân district in Bạc Liêu, home to a long-standing village craft of hand-rolling the noodles. Made from rice flour, each strand is rolled round like a silkworm, steamed, then bathed in coconut cream and sweet-and-sour fish sauce. The dish balances the savory meatballs with the sweet richness of coconut, giving it an unmistakable character.
