Glutinous rice crackers grilled over glowing coals until they puff to many times their size — crisp, airy and sweet with the coconut fragrance of Bến Tre.
The craft village of Sơn Đốc in Giồng Trôm district, Bến Tre, has been famous for more than a century for its glutinous-rice crackers. Sticky rice paste is pounded until chewy, mixed with coconut milk and sugar, rolled thin, sun-dried, then grilled over coals until it puffs up crisp. Each Lunar New Year, the scent of grilling rice crackers drifts through the whole hamlet, evoking the very soul of the southern countryside.
