Soft, supple rolled rice sheets that wobble and 'nod' when you pick them up, dipped in rich fish sauce with pork and scallion oil โ a specialty of the town of Tien Yen.
Banh gat gu is a specialty of Tien Yen in Quang Ninh, its playful name coming from the way the soft, floppy rolls sway as if nodding in agreement when you lift them. Soaked and ground rice is spread thin, then rolled into pearly-white, chewy but never sticky rolls. Locals dip them in a bowl of steaming fish sauce simmered with minced pork and fragrant scallion oil.
