A dense, chewy cake glossy black from ramie leaves, filled with sweet, nutty mung bean and coconut and scented with banana leaf โ the specialty of Tu Tru village in Thanh Hoa.
Banh gai from Tu Tru originates in Mia village, Tho Dien commune, Tho Xuan district of Thanh Hoa, and was once a delicacy offered to the king. Ramie leaves are boiled well and pounded smooth, then blended into glutinous rice flour to give the cake its signature black color and silky chew, before being wrapped in dried banana leaves and steamed. One bite reveals the nuttiness of mung bean, the richness of coconut and a lingering sweet fragrance.
