Jet-black cakes made from pounded gai leaves with a sweet mung bean and coconut filling, chewy and fragrant in a dried banana-leaf wrap, a specialty of Hai Duong.
Ninh Giang banh gai spans more than a century and was once a tribute delicacy of Hai Duong offered to the king. Gai leaves are boiled and pounded fine, then mixed into glutinous rice flour to give the cake its signature glossy black hue, enveloping a delicately sweet filling of mung bean, coconut and candied winter melon. Chewy and scented with dried banana leaf, it is a country gift many seek out when passing through this land.
