Legend says that when Emperor Bao Dai passed through Hai Duong he was offered these cakes, praised them, and bestowed the seal 'Bao Hien.' Made from mung bean, sugar, lard and pomelo-flower essence, they melt smooth as mist and pair best with a cup of strong tea.
