Unlike the lowland banh cuon dipped in fish sauce, the people of Lang Son eat their egg rolls bathed in piping-hot bone broth, perfect for the crisp border-region weather. As the rice sheet steams, the vendor cracks an egg onto the batter and rolls it up so the yolk stays soft and molten, spilling richly with each bite.
