Banh cuon Thanh Tri comes from the old village of Thanh Tri and was praised by writer Thach Lam as one of Hanoi's most exquisite treats. The maker steams each sheet, thin as paper, over a cloth-covered pot, scatters fried shallots and folds it into soft supple layers. A skillfully mixed dipping sauce, touched with a drop of belostomatid essence and eaten with cinnamon pork sausage, completes its refined flavor.
