Banh cong is a humble specialty tied to the land of Can Tho, its name coming from the ladle-like mold (cong) used to fry the cakes. A batter of rice and soy flour is fried until crisp, then crowned with mung beans, pork and a bright-red shrimp on top. Eaten with fresh greens, it is the taste of childhood for the people of the Western capital.
