🧇 Banh Can (Clay-Mold Rice Cakes)

Rice-batter cakes baked in terracotta molds, topped with quail egg or seafood and dipped in nem-fish sauce with pork meatballs.

A specialty of the south-central coast and Da Lat. The cakes are cooked over a charcoal stove in earthen molds until crisp at the edges and soft in the middle — best enjoyed hot in the cool mountain air.

Flavour: Crisp edges, soft centers, rich with nem fish sauce
