Ba khía are a crab relative that lives in the mangrove forests of Cà Mau and Bạc Liêu, caught during their swarming season and cured in earthen jars until richly salty. The most famous come from Rạch Gốc, prized for firm meat and fragrant roe. To eat, the claws are cracked and tossed with garlic, chili, lime and sugar to soften the saltiness — served with hot rice or noodles, it leaves an unforgettable craving.
