🥩 Suwon galbi (grilled beef ribs)

Large-cut beef ribs, lightly seasoned and charcoal-grilled so the meat speaks for itself.

Suwon once had the largest cattle market in the capital region, established by King Jeongjo to supply Hwaseong fortress. Galbi here is marinated more lightly than elsewhere, cut in big pieces, seasoned mainly with salt and grilled over charcoal until the edges char. It comes with rib soup and rice steamed in a stone pot.

Flavour: Sweet with beef, smoky from charcoal
