Koreans eat hot food to beat the heat: on the three hottest 'sambok' days of summer, samgyetang shops have queues down the street. The bird is stuffed with rice, fresh ginseng, chestnuts and jujube, then simmered until the meat falls off the bone and the broth turns milky. You season it yourself with salt and pepper at the table.
