Freshwater snail soup with soybean paste and greens โ the hangover cure of landlocked Chungbuk.
Chungbuk is the only province without a coast, so its 'seafood' comes from streams: olgaengi snails the size of a fingertip, boiled for stock, then picked and simmered into a soybean-paste soup with leafy greens. The broth is pale green, mineral and cooling, and is considered the region's finest cure for a hangover.
Flavour: Clean, slightly bitter with a sweet finish
