Fresh squid stuffed with vegetables and glass noodles, steamed and sliced โ a Sokcho fish-market speciality.
On the Gangwon coast squid is so plentiful that people invented something better than grilling it: the body is stuffed with glass noodles, tofu, vegetables and the chopped tentacles, steamed, then dipped in egg and pan-fried. Sliced into rounds, each piece shows a pretty ring of filling. Sokcho's fish market sells it alongside fish cakes and snow crab.
