🥟 Daegu flat dumplings

Paper-thin dumplings with almost no filling, pan-fried and dressed in a spicy sauce.

Born in hard times when meat filling was a luxury: the wrapper is rolled thin, the filling is little more than glass noodles and spring onion, and the dumplings are pan-fried crisp then drizzled with soy-chilli sauce and scattered with spring onion. You find them almost nowhere but Daegu, in markets and street stalls, usually alongside tteokbokki.

Flavour: Lightly crisp, salty and spicy
