๐Ÿ™ Muan baby octopus

Octopus caught by hand on the mudflats โ€” eaten raw, grilled, or in a spicy soup.

In Muan people catch octopus by reaching into mud holes on the tidal flats. It is eaten as fresh as possible: cut up while still moving and dipped in sesame oil, wound around a chopstick and grilled, or cooked into a fiery soup with vegetables. Locals say one nakji in summer is worth a whole course of medicine.

Flavour: Sweet, fresh, springy
